20 Days of Cookies - Day 18

Day 18: Toffee Hazelnut Toffee Bites

Also called meltaways, these little bite-sized treats are so tender they do melt in your mouth. I've added the rich flavor of toasted hazelnut and toffee to make these even more special! Don't be surprised, there are no eggs in this recipe.

2 sticks of butter, softened
1 tsp vanilla
2 1/4 cups AP flour
1/4 cup toasted hazelnuts, ground finely
1/2 cup toffee bits (such as Heath)
1/2 cup powdered sugar

• Preheat oven to 400ºF. Line baking sheets with parchment paper.
• Whisk flour and ground hazelnut together, set aside.
• Beat butter and sugar in stand mixer. Blend flour in with butter mixture slowly. Fold in toffee bits.
• Using small ice cream scoop, drop onto baking sheets 1 inch apart. Bake for 8 minutes. Immediately dip each cookie into powdered sugar while still warm.
