Sunday Breakfast

Lazy Sunday mornings almost always come with a craving for pancakes or waffles. This past weekend I decided to put to use one of our wedding gifts that I was most excited about: the Ebelskiver Pan! Otherwise knows as filled pancakes that turn out like donut holes that allow your creativity to soar to great heights. Savory pancakes can easily be enjoyed with this pan as well such as using a cornmeal pancake mix combined with cheese and filled with savory treats such as bacon, sausage, or veggies. This particular morning however my sweet tooth reigned and we had bananas on hand. Result: cinnamon sugar banana filled pancakes with pure Vermont maple syrup. 


Favorite pancake mix
1 whole banana, peeled and chopped
2 Tbs. brown sugar
1/4 tsp. ground cinnamon
3 Tbs. butter, melted
1/3-C Grade B maple syrup


Combine banana, sugar and cinnamon in small bowl and set aside. Preheat Ebelskiver pan on medium heat. Spoon 1/2 tsp. butter into each well followed by enough pancake batter to fill halfway. Spoon teaspoon of banana mix onto top center of batter and cover with more pancake batter. Let cook for 2-3 minutes. Using two chopsticks or skewers turn pancakes over when gold brown on first side. Cook for additional minute. Remove from pan and serve with hot maple syrup.
