20 Days of Cookies - Day 20

Day 20: Candied Pecan Oatmeal Chewies

It's the last day! I hope everyone reading these enjoyed seeing some familiar and some different recipes. This last recipe couldn't be simpler. sI love the sticky and gooey mound of sweetness these cookies create. Yet with the addition of oatmeal you almost feel healthy splurging on them! Feel free to throw in some dried fruit too is you wish, like raisins, cranberries, or apricots! But don't fret, the candied part of the pecans is already done for you by Emerald Nuts: Pecan Pie Glazed Pecans. They are delicious and easy!

2 cups quick rolled oats
1/2 cup AP flour
1 Tbs + 1/2 tsp apple pie spice (or 1 Tbs cinnamon, 1/4 tsp nutmeg, 1/4 tsp cloves)
1/4 tsp kosher salt
2-5 oz bags Emerald Nuts Pecan Pie Glazed Pecans, crushed coarsely
14 oz sweetened condensed milk
1 Tbs molasses

• Combine oats, flour, spices, salt, and nuts in bowl. Stir in milk and molasses. Let sit for 30 minutes so that oats can absorb liquid.
• Preheat oven to 350ºF. Line baking sheets with parchment paper. Using two tablespoons, drop cookies 2 inches apart on baking sheets and flatten out with back of spoon lightly. Bake 10-12 minutes or until golden. Remove from baking sheet and allow to cool completely.
