20 Days of Cookies - Day 8

Day 8: Peanut Butter Caramel Blossoms
Another classic; Easy but traditional ... A treat that never gets turned down ... I could go on but I think you get the point. It doesn't matter how simple or predictable something is; If it tastes good and makes you happy then that's all that matters. THIS is one of those cookies!

  • 48 Hershey's Kisses Filled with Caramel
  • 1 stick butter, softened
  • 3/4 cup creamy peanut butter (I prefer Skippy)
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 XL egg
  • 2 Tbs milk
  • 1 tsp vanilla extract
  • 1-1/2 cups AP flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Granulated sugar for rolling
• Heat oven to 375°F. Remove wrappers from Kisses.
• Mix butter and peanut butter in stand mixer until creamy and well incorporated. Add sugars; beat until fluffy. Add egg, milk and vanilla; beat well. Whisk together flour, baking soda and salt in separate bowl; gradually beat into peanut butter mixture.
• Shape dough into 1" balls. Roll in granulated sugar; place on cookie sheet lines with parchment paper.
• Bake 8 to 10 minutes or until lightly browned. Immediately press a caramel filled chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies.
