It's a Hungry Girl Flatout Feast!

Lisa Lillien, aka Hungry Girl, was in Rochester recently during her book tour to promote her newest cookbook "The Hungry Girl Diet" (available here on Amazon). It's chock full of hearty yet healthy meal plans from breakfast to dinner all emphasizing generous portions sizes. Along with other area bloggers I was treated to a tour of Wegmans where Lisa pointed out her favorite ingredients and shared some useful tips if abiding to the Hungry Girl diet.

Before our visit to meet Lisa we were given samples of Flatout bread. Here are some delicious and easy recipes that I came up with using simple ingredients I had around the house. My daughter LOVED the pizza!

Turkey Wraps

Flatout traditional flatbread, sliced turkey, green leaf lettuce, tomato, avocado, peppers,
pepperjack cheese, spicy mustard and mayonnaise.

My kitchen helper spreading the mayo.

Roll it all up.

The wraps are very light also making them extremely delicate.
Wrap gently, don't overstuff and you'll be sure to enjoy as much as we did!

Thin Crust Pizza

Flatout Thin Crust Artisan Flatbread, pizza sauce, shredded mozzarella,
any other toppings of choice, though less is more
(ricotta and hot peppers pictured.)

Preheat oven to 400ºF (I increased it from 375ºF on recommended on package);
pre-bake 4 minutes without toppings, then 4-6 more minutes with toppings.

Nomnomnomnomnomnomnomnomnomnom.

Meatless Philly Cheesesteaks

Caramelize onions, sauté pepper and mushrooms. Season to your preference.
I used a splash of worcestershire sauce, and salt and pepper of course.

I made a feta sauce for the cheese component. I melted crumbled feta with a
little milk over a double boiler and stirred until melted;
for an extra creamy step, press through a fine mesh sieve.

Start assembling by using  Flatout Foldit Flatbread;
I'm using Gardein Beef Tips for the "meat";
spread some feta and add cooked veggies.
