Simple is Best [Salad]

Whether you're in a hurry or only have a limited number of fresh items in your pantry and fridge, sometimes it's the simplest dishes that have the most rewarding flavor. Take a salad for example. Do you ever find yourself fumbling through a bowl of a million different ingredients just to create the perfect forkful? Well not if you only have a certain number of salad toppers in said bowl. One of these salads doesn't even have lettuce. How's that for simple!?

Antipasto Inspired Salad

Ingredients:
  • baby tomatoes on the vine
  • marinated artichoke hearts
  • fresh mozzarella
  • avocado
  • basil, chiffonade
  • 1 lemon, juices
  • 4 Tbs best olive oil
  • sea salt and fresh cracked pepper
Directions: Slice to your preference and assemble on plate. Whisk together lemon juice, olive oil, salt, and pepper. Drizzle over top. Enjoy!

'Chicken' Chopped Salad

Ingredients:
  • baby tomatoes on the vine, sliced, cored and de-seeded
  • cucumber, quartered
  • avocado, chopped
  • crumbled French feta cheese
  • 1 Quorn chicken patty, baked and chopped
  • butter lettuce
  • pre-made dressing of choice (I used organic Greek by Wegmans)
Directions: Assemble all ingredients on plate and enjoy!
